Vegan Black Bean Tacos

Ingredients:

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground coriander
  • Salt and pepper, to taste
  • 8 small corn or flour tortillas
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges
  • Optional toppings: salsa, vegan sour cream, pickled onions, shredded lettuce, or vegan cheese

Instructions:

  1. Prepare the Filling:
    1. Heat olive oil in a large skillet over medium heat.
    2. Add the diced onion and cook until it becomes translucent, about 3-4 minutes.
    3. Stir in the minced garlic and diced bell pepper. Cook for another 2-3 minutes until the peppers start to soften.
    4. Add the black beans, ground cumin, chili powder, smoked paprika, and ground coriander to the skillet. Stir well to combine.
    5. Season with salt and pepper to taste. Cook for an additional 5-7 minutes, allowing the flavors to meld together. Remove from heat.
  2. Warm the Tortillas:
    1. While the filling is cooking, warm the tortillas. You can do this by heating them in a dry skillet over medium-high heat for about 30 seconds on each side or by wrapping them in a damp paper towel and microwaving for about 30 seconds.
  3. Assemble the Tacos:
    1. Lay the warm tortillas flat on a clean surface or plate.
    2. Spoon a generous amount of the black bean mixture onto each tortilla.
    3. Top with avocado slices, cherry tomatoes, fresh cilantro, and any other desired toppings.
    4. Serve immediately with lime wedges on the side for squeezing over the tacos.
