Ingredients:
- 2 medium zucchinis, spiralized
- 1 cup cherry tomatoes, halved
- 1/4 cup pine nuts
- 1/2 cup fresh basil leaves
- 1/4 cup grated Parmesan cheese
- 2 garlic cloves
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions:
- In a food processor, combine basil, pine nuts, Parmesan cheese, and garlic.
- Pulse while slowly adding olive oil until a smooth pesto forms. Season with salt and pepper.
- Toss zucchini noodles with the pesto until well coated.
- Add cherry tomatoes and toss gently.
- Serve immediately for a light, low-carb meal.
