Low-Carb Zucchini Noodles with Pesto

Ingredients:

  • 2 medium zucchinis, spiralized
  • 1 cup cherry tomatoes, halved
  • 1/4 cup pine nuts
  • 1/2 cup fresh basil leaves
  • 1/4 cup grated Parmesan cheese
  • 2 garlic cloves
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions:

  1. In a food processor, combine basil, pine nuts, Parmesan cheese, and garlic.
  2. Pulse while slowly adding olive oil until a smooth pesto forms. Season with salt and pepper.
  3. Toss zucchini noodles with the pesto until well coated.
  4. Add cherry tomatoes and toss gently.
  5. Serve immediately for a light, low-carb meal.
