Grilled Chicken and Avocado Salad

Ingredients:

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 6 cups mixed greens (lettuce, spinach, arugula)
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar

Instructions:

  1. Season chicken breasts with olive oil, salt, and pepper.
  2. Grill chicken over medium heat until fully cooked, about 6-7 minutes per side. Let it rest, then slice.
  3. In a large bowl, combine mixed greens, avocado, cherry tomatoes, and red onion.
  4. In a small bowl, whisk together lime juice, olive oil, and balsamic vinegar.
  5. Toss the salad with the dressing and top with sliced grilled chicken.
  6. Serve immediately.
