Detoxifying Quinoa Salad

Ingredients:

  • 1 cup quinoa, cooked
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1 avocado, diced
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, parsley, and avocado.
  2. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve chilled.
