Ingredients:
- 1 cup lentils, rinsed
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon turmeric
- Salt and pepper to taste
- 1 handful of spinach
Instructions:
- In a large pot, sauté onion and garlic until fragrant.
- Add carrots and celery, cooking for a few minutes.
- Stir in lentils, diced tomatoes, vegetable broth, and spices.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Stir in spinach and cook until wilted.
- Serve hot.
