Detox Lentil Soup

Ingredients:

  • 1 cup lentils, rinsed
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 1 handful of spinach

Instructions:

  1. In a large pot, sauté onion and garlic until fragrant.
  2. Add carrots and celery, cooking for a few minutes.
  3. Stir in lentils, diced tomatoes, vegetable broth, and spices.
  4. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Stir in spinach and cook until wilted.
  6. Serve hot.
