Make Different Yogurts Using Different Methods

Making yogurt at home can be a rewarding experience, and there are several methods you can try, each resulting in slightly different textures and flavors. Here’s how to make yogurt using three different methods: traditional stovetop, Instant Pot, and yogurt maker.

1. Traditional Stovetop Method:

Ingredients:

  • 4 cups of milk (whole milk for creamier yogurt, or 2% for lighter yogurt)
  • 2-3 tablespoons of plain yogurt with live active cultures (as a starter)

Instructions:

  1. Heat the Milk: Pour the milk into a heavy-bottomed saucepan and heat it over medium heat. Stir occasionally to prevent scorching. Heat the milk until it reaches about 180°F (82°C) on a thermometer. Heating the milk helps change its protein structure for a thicker consistency.
  2. Cool the Milk: Remove the milk from heat and let it cool until it reaches around 110°F (43°C). To speed up the cooling process, you can place the saucepan in a bowl of cold water.
  3. Add the Starter: In a small bowl, mix a few tablespoons of the warm milk with the plain yogurt to temper it. Then, stir this mixture back into the rest of the warm milk in the saucepan.
  4. Incubate: Pour the milk mixture into a clean container or containers with lids. Cover the container(s) with a lid or plastic wrap. Keep the yogurt mixture warm by wrapping the container(s) in a towel or placing it in an insulated cooler. Let it sit undisturbed for 4-6 hours, or until the yogurt has thickened to your liking.
  5. Chill: Once the yogurt is set, refrigerate it for at least 2 hours before serving. It will continue to firm up as it chills.

2. Instant Pot Method:

Ingredients:

  • 4 cups of milk
  • 2-3 tablespoons of plain yogurt with live active cultures

Instructions:

  1. Prepare the Milk: Pour the milk into the Instant Pot. Close the lid and set the Instant Pot to the “Yogurt” setting. Heat the milk until it reaches 180°F (82°C). This typically takes 1-2 hours.
  2. Cool the Milk: Once the milk reaches 180°F, remove the inner pot from the Instant Pot and let it cool down to 110°F (43°C). You can speed up the cooling process by placing the pot in a bowl of cold water.
  3. Add the Starter: In a small bowl, mix a few tablespoons of the warm milk with the plain yogurt to temper it. Stir this mixture back into the rest of the warm milk in the Instant Pot.
  4. Incubate: Place the inner pot back into the Instant Pot base and cover with the lid. Set the Instant Pot to the “Yogurt” setting again, adjusting the time to 4-8 hours depending on how tangy you like your yogurt and how thick you want it.
  5. Chill: Once the incubation is complete, refrigerate the yogurt for at least 2 hours before serving.

3. Yogurt Maker Method:

Ingredients:

  • 4 cups of milk
  • 2-3 tablespoons of plain yogurt with live active cultures

Instructions:

  1. Prepare the Milk: Heat the milk in a saucepan until it reaches 180°F (82°C). Remove from heat and let it cool to 110°F (43°C).
  2. Add the Starter: In a small bowl, mix a few tablespoons of the warm milk with the plain yogurt to temper it. Stir this mixture back into the rest of the warm milk.
  3. Prepare the Yogurt Maker: Follow the manufacturer’s instructions for your yogurt maker. Typically, you’ll pour the milk mixture into the yogurt maker’s container and cover it.
  4. Incubate: Place the container into the yogurt maker and set it to incubate for 4-8 hours, depending on your desired thickness and tanginess.
  5. Chill: Once incubation is complete, refrigerate the yogurt for at least 2 hours before serving.

Tips for Success:

  • Use a thermometer to monitor the milk temperature accurately.
  • Use plain yogurt with live active cultures as your starter.
  • The longer you incubate the yogurt, the tangier it will become.
  • For thicker yogurt, you can strain it through cheesecloth or a fine-mesh sieve lined with paper towels.

Homemade yogurt made with any of these methods is versatile and can be enjoyed plain, with fruit, or in various recipes. Experiment with different milk types and incubation times to find your perfect homemade yogurt!
