Spicy Chickpea and Quinoa Bowl

Ingredients:

  • 1 cup cooked quinoa
  • 1 can chickpeas, rinsed and drained
  • 1 teaspoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1/2 cup diced cucumber
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped cilantro
  • Juice of 1 lemon

Instructions:

  1. In a skillet, heat olive oil over medium heat.
  2. Add chickpeas, smoked paprika, cumin, chili powder, salt, and pepper. Cook until chickpeas are slightly crispy.
  3. In a large bowl, combine cooked quinoa, spiced chickpeas, cucumber, red bell pepper, and cilantro.
  4. Squeeze lemon juice over the bowl and toss to combine.
  5. Serve warm or chilled.
