Ingredients:
- 1 cup cooked quinoa
- 1 can chickpeas, rinsed and drained
- 1 teaspoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1/2 cup diced cucumber
- 1/2 cup diced red bell pepper
- 1/4 cup chopped cilantro
- Juice of 1 lemon
Instructions:
- In a skillet, heat olive oil over medium heat.
- Add chickpeas, smoked paprika, cumin, chili powder, salt, and pepper. Cook until chickpeas are slightly crispy.
- In a large bowl, combine cooked quinoa, spiced chickpeas, cucumber, red bell pepper, and cilantro.
- Squeeze lemon juice over the bowl and toss to combine.
- Serve warm or chilled.
