Ingredients:

  • 1 lb (450g) assorted mushrooms (such as cremini, button, or shiitake), cleaned and sliced
  • 2 tablespoons olive oil or vegan butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley (optional, for garnish)
  • Lemon wedges (optional, for serving)

Instructions:

  1. Prepare the Mushrooms:
    • Clean the mushrooms by wiping them with a damp cloth or paper towel to remove any dirt. Trim the stems and slice the mushrooms into uniform thickness.
  2. Sauté the Mushrooms:
    • Heat the olive oil or vegan butter in a large skillet over medium heat.
    • Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
    • Add the sliced mushrooms to the skillet, spreading them out in a single layer. Allow the mushrooms to cook undisturbed for a few minutes to develop a golden brown color on the bottom.
  3. Season the Mushrooms:
    • Sprinkle the fresh thyme leaves over the mushrooms. Season with salt and pepper to taste.
    • Use a spatula to toss the mushrooms, ensuring they cook evenly and absorb the flavors from the garlic and thyme.
  4. Cook Until Tender:
    • Continue to cook the mushrooms, stirring occasionally, until they are tender and golden brown. This will take about 5-7 minutes, depending on the size and variety of mushrooms.
  5. Garnish and Serve:
    • Once the mushrooms are cooked to your liking, remove the skillet from the heat.
    • Garnish the sautéed mushrooms with chopped fresh parsley, if desired.
    • Serve the mushrooms hot as a delicious vegan side dish or as a topping for pasta, rice, or grilled tofu.
    • Optionally, serve with lemon wedges on the side for a bright, citrusy finish.
